Cornbread

1 oz plain flour
5 oz maize flour
3 tablespoons sugar
1 teaspoon salt
1 teaspoon baking powder
1/2 pint milk
1/2 teaspoon bicarbonate of soda
2 eggs
2 tablespoons melted lard

Combine the maize flour, plain flour, sugar, salt and baking powder in a bowl and mix well. Combine the milk and soda in a small bowl and beat it until foamy, then add it to the maize flour mixture. Beat in the eggs, then stir in the melted lard. Pour the mixture into a greased hot ovenproof dish. Bake in a hot oven, 450°F 230°C gas mark 8 for 20 minutes or until lightly browned on top. The bread does stick to the dish even when greased so you might prefer to use a modern non-stick loaf tin.

Hoe Cakes

8 oz maize flour
1 teaspoon salt
1/4 pint water
2 tablespoons bacon dripping

Mix everything except one tablespoon of dripping and make a round cake of dough about 1 to 1 1/2 inches thick. The other tablespoon of dripping should be heated in a pan or skillet and the dough added when hot. Cook until brown, then turn and brown the other side.
